      Instructions
      1. Whisk the dry ingredients together in a large bowl
      2. Separate the eggs and in a separate bowl, beat the egg whites until stiff peaks form
      3. Mix together the egg yolk, milk, and oil until combined. Add the dry ingredients and mix well
      4. Fold in the egg whites with a spatula, taking care not to stir too hard
      5. Cook in a waffle iron according to the directions on the iron (don't forget to grease the iron!)

      If you're making bunch of waffles and only have one iron like I do, let the cooked waffles sit on a cooling rack so they don't get soggy on a plate while waiting for the other waffles!

      Fluffy Belgian Waffles

      My mom got me a waffle iron randomly a long time ago, and it’s become one of those random appliances I am so happy I have in my college apartment. In the waffles vs. pancakes debate, Belgian waffles usually win out for me, precisely because of the texture that this recipe yields – perfectly crispy on the outside, light and fluffy on the inside. I also happen to be pancake-challenged… I always flip too early (anyone else too impatient for pancake flipping?!), and the waffle iron makes it pretty hard to mess up because it literally tells you when it’s done.

      Of course you can just use basic pancake/waffle mix to satisfy your breakfast food craving… but if you’re trying to step up your brunch hostess/breakfast for dinner/PJ party/#wafflewednesday (it’s a thing, okay?) game, you have to try this from-scratch version. You probably already have all the ingredients at home, and there is nothing rocket science-y about it – just something you may not think to do – you whip the egg whites to get lots of air in that batter and voila, perfectly fluffy waffles!
