      1. Preheat oven to 350 degrees 
      2. Mash bananas with a fork, then stir in the applesauce, honey, and coconut oil.
      3. Beat in egg and vanilla until well combined.
      4. Add remaining ingredients, using a spatula to wipe down sides of bowl until dry ingredients are no longer visible.
      5. Line 12-cup muffin tin with liners or spray with cooking spray; divide batter evenly and top with chocolate chips.
      6. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean. If you're short on time, grease and pour into an 8x8 pan and adjust baking time as needed. Cut into squares to serve.
